Today’s Friday Favorite post is one of my very favorite holiday recipes. It tastes great, and it’s always a crowd-pleaser, but the best part is that it only takes four ingredients and about five minutes to make. So it’s especially appropriate for those hectic holiday days. Isn’t that every day in December? I feel like this month is kicking my butt. Hard. (And let’s not think about that Christmas shopping that I haven’t even started yet).
Grab some popcorn. Either two bags of unsalted microwave popcorn, or about 3/4 C. kernels. Pop it. Microwave it, or pull out the hot-air popper, or use the old-fashioned stovetop method (that’s the one I prefer). While it’s popping, unwrap a box of candy canes. I usually try to buy the sad box of broken candy canes at the store. Saves me time (lazy) and those poor candy canes won’t sit there all month feeling down and out. Everybody wins. Put the candy canes in a ziploc bag and pound them to smithereens. It’s therapeutic. Go ahead. Hit ’em again.
Then take a bag of white chocolate chips and dump them in a microwave-safe bowl. Bonus points for using gourmet chocolate…but no pressure. Use whatever you like. Add a little vegetable oil (or canola, or really anything with a light flavor). It’s just there to smooth out the chocolate while it’s melting. Somewhere in the neighborhood of a tablespoon. Just eyeball it. No need to dirty the measuring spoons.
Microwave the chocolate chips + oil until it’s melted. Stir it after every 20 seconds (or 30 if you’re feeling wild). Only heat it until it’s just barely smooth. No need to overdo it. Then toss the chocolate and candy cane pieces in the bowl with the popcorn and toss to coat. Dump it out on some waxed paper until it dries. Then break up the clumps, put it in a festive bowl and you’re ready to party.
This makes a great gift for neighbors, and it’s pretty inexpensive, too! I always keep these ingredients handy during the holidays so I can whip up a batch when I have unexpected guests, or for that short-notice party. - Popcorn (2 bags unsalted, microwave) OR 3/4 C kernels
- 1 (12 oz.) bag White Chocolate Chips
- 1 box Candy Canes
- 1 Tbsp. Vegetable oil
- Pop the popcorn (either in the microwave, stovetop, or hot-air popper)
- Unwrap and crush candy canes
- Melt chocolate and vegetable oil in microwave, stirring every 20 seconds
- When chocolate is melted, combine all ingredients in large bowl and stir to coat evenly
- Pour coated popcorn on waxed paper until dry
- Break apart and put in serving bowl.
